Chicken parmesan but without the splattery mess from frying, what is not to like. This chicken parmesan comes together quickly, scales well for a crowd, and is easy to clean up.
Makes: 3-4 servings

Total time: 30 minutes
Ingredients:
3-4 small chicken breasts, boneless and skinless
3 Tbsp oil
1/4 cup bread crumbs
1/4 cup Parmesan cheese, finely grated
1/2 cup marinara sauce
1 cup mozzarella cheese, shredded
Instructions:
Preheat oven to 400F. Set up the dredge station with oil in one bowl or plate, and bread crumbs mixed with Parmesan cheese in another bowl or plate.
After trimming chicken and preparing as needed, dip chicken first in oil then in breadcrumbs. Place on a lined cookie sheet.
Bake at 400F for 20 minutes.
Remove from oven and place 2 Tbsp marinara sauce, and about 1/4 to 1/2 cup of Mozzarella.
Cook another 5 minutes until chicken reaches 165F and cheese is slightly browned.
Tips and Notes:
For extra flavor, add Italian seasoning to the bread crumbs or use pre-seasoned crumbs.
Extra large chicken breasts can be butterflied, or flattened to cook faster.
Substitute pork for chicken if desired. Cooking time may need to be adjusted.
A rack can be used on the cookie sheet for better crisping.
