Taqueria Sauce

Taqueria sauce is a great addition to many things, especially breakfast burritos. Today I am trying to replicate a store bought sauce and this is my starting point.

Makes: 2 cups

Prep time: 10 minutes

Total time: 1 hour






Ingredients:

  • 1 medium onion, roughly chopped

  • 4-6 cloves garlic, whole

  • 2-4 roma tomatoes

  • 4-6 dried chilies de arbol

  • 3-4 Tbsp oil

  • 1/4 tsp cumin, ground or whole

  • 1 tsp salt

  • 1/4 cup water

  • 2-4 tsp lime juice, see note

Instructions:

  1. Heat oil in a wide pan. Add onions and soften 4-6 minutes. No need to brown.

  2. Add garlic and tomatoes and soften 4-6 minutes. Move onions to sides if you need more space. Keep the tomatoes moving to soften all sides.

  3. Add in cumin and arbol chilies. Keep moving the chilies until all sides have been fried and they puff a little. 30 sec.

  4. Add water and salt. Turn off heat, and cover with a lid to cool.

  5. Add everything to the blender and process until smooth, adjust salt and add lime juice to desired taste.


Tips and Notes:

  • I find bottled lime juice isn't very acidic, so add in 1/8 - 1/4 tsp citric acid to better adjust acidity levels.

  • Arbol chilies do have a kick to them, they can be substituted with something less spicy if desired. Or add more tomato and fewer chilies.
