This fruity marinade has a balanced sweet and sour side. This can be made ahead of time for grilling, broiling, or frying. Turn them into kabobs or stir fry for a quick meal. Freeze it and make meal prep even easier.

Ingredients:
2 large chicken breasts, boneless and skinless
1/2 Tbsp garlic powder
2 tsp onion powder
1/2 cup apricot preserves
2 1/2 Tbsp honey
7 large garlic cloves, minced
1 quarter sized slice of ginger, minced
1 Tbsp soy sauce
2 Tbsp apple cider vinegar
1/4 tsp salt
1/4 tsp pepper
Instructions:
Combine all ingredients together except for chicken. Stir to combine.
Chicken can be left whole, or cut and placed on skewers for kabobs.
Either pour the marinade over the chicken in the baking dish, cover and marinate at least 2 hours or overnight before baking.
Or place chicken and marinade in freezer bag, squeeze out all the air and freeze immediately.
Tips and Notes:
1 1/2 tsp ground ginger can be used to replace the fresh ginger.
