This is a lovely recipe for cinnamon buns that are reminiscent of Cinnabons. I like to sprinkle in mini chocolate chips for an extra delicious touch. A small batch will make between 4 and 8 rolls while a full batch will feed a crowd depending on how thin you roll the dough.

Ingredients:
Dough:
1 cup milk
3 Tbsp water
2 Tbsp butter
1 egg
3 1/4 cups flour
2 Tbsp sugar
2 tsp yeast
Filling:
1/2 cup brown sugar
2-3 tsp cinnamon
2-3 Tbsp butter
4 Tbsp butter for the pan
Instructions:
Combine milk, water, and butter and warm to 110F. Stir to melt the butter fully to prevent a butter lump.
Add yeast and proof 5-10 minutes until beginning to froth.
In a large bowl, add milk mixture, egg, and sugar.
Add flour one cup at a time mixing between additions. When dough comes together, turn out onto counter and knead until smooth and elastic.
Oil the bowl and place dough ball into to rise, cover bowl to prevent a skin forming. Allow to double, about 1 hour.
Once doubled, roll out dough to about a 1/4" thickness. Width depends on how large you want the rolls. Length is how many rolls you want to get.
In a small bowl combine filling ingredients, and spread over dough leaving a 1" border on the side closest to you. Or spread softened butter over dough, and sprinkle with brown sugar and cinnamon in an even layer.
Beginning at the edge furthest away, roll dough in a tight log. Cut into rolls with a serrated knife or unflavored dental floss or thread.
Preheat oven to 350F.
Place in dish with melted butter and allow to rise another 30-45 minutes. Bake at 350F for about 30 minutes until golden and cooked through.
Tips and Notes:
It always takes more filling than the recipe calls for. I always double the filling.
Sprinkle some mini chocolate chips for a tasty chocolate cinnamon roll. Or apple pie filling, or drizzle with glaze, or cream cheese frosting.
Recipe can be divided into a third for a much smaller portion. Omit water and use a whole egg still. (1/4 cup milk, 2 tsp butter, 1 egg, 1 1/4 cup flour, 2 tsp sugar, 1 scant tsp yeast. Make full filling recipe.)
